Massaged Kale Salad

This simple yet nourishing salad features tender, massaged kale with crunchy cucumber, hearty chickpeas, and nutty sunflower seeds. A creamy avocado dressing ties everything together for a fresh and flavorful bite. It’s an easy go-to for a healthy meal or side dish. This recipe was originally developed by Melissa Wood Health.

Ingredients (opt for organic when possible)

  • 4 cups kale, stems removed, thinly sliced

  • ½ cucumber, chopped

  • ⅓ cup canned chickpeas, rinsed

  • 2 tbsp sunflower seeds

Creamy Avocado Dressing

  • ½ avocado

  • 1 tbsp extra virgin olive oil

  • 1 tbsp lemon juice

  • 1 tsp apple cider vinegar

  • Sea salt and pepper, to taste

  • 1 clove minced garlic

Process

  1. Rinse and dry produce. Cut kale and cucumber.

  2. Blend all dressing ingredients in a blender or food processor until creamy.

  3. Place chopped kale in a salad bowl and add dressing. Massage dressing into kale for 1–2 minutes.

  4. Toss in cucumbers, chickpeas, and tomatoes (optional). Top with sunflower seeds.

  5. Enjoy!
